Chai

Today, we have a simple recipe that will help you step up your Chai game. It starts just the same; with the blend of tea and herbs in a pot, steeping an infusion. But, by adding some finely ground extras, you help your Chai come alive with flavor!

1/4 cup of raw sugar (brown sugar will do), a teaspoon of cinnamon, and a half teaspoon of nutmeg all ground together will be added to the infusion. I use a mortar and pestle to grind, but do what you can with what you have. Next, a splash of vanilla extract into the mix and boil the infusion down a bit. Not so much that it becomes a decoction, you want that water for your beverage.

Finally, pour into your choice of vessel and add milk and honey to taste.
